Leek and potato soup

Leek and potato soup

Ingredients:

1 onion, chopped

2 leeks, chopped

3 potatoes, peeled and diced

2 tbsp butter (if you want)

100ml milk

500ml water/ veg stock

1 tbsp vegetable oil

Salt and pepper (to taste)

 

Method:

1.  Heat vegetable oil in a large pan and add the onions, leeks and milk.

2.  Cook for 2 minutes.

3.  Add potatoes and cook for a further 2-3 minutes.

4.  Add water and vegetable stock, then season with salt and pepper.

5.  Simmer until the vegetables are tender (soft).

6.  Whizz with a blender until smooth.

7.  Serve with a nice loaf of bread.
